- 1 1/2 pounds roma tomatoes
- 2 teaspoons olive oil
- 3/4 cup onions chopped fine
- 1 clove garlic chopped fine
- 1/4 to 1/2 teaspoon sugar
- S&P
- Blanche and slip skins, seed and chop.
- Cook onions until soft but not brown.
- Add garlic and cook 2 minutes more.
- Add tomatoes, S&P and sugar. Simmer for 10 minutes.
