- 2 tablespoon oil
- 2 cloves garlic
- 1 fresh Serrano
- 1 tablespoon grated lemon rind
- 1 pound ripe tomatoes
- 1 tablespoon tomato paste in 2/3 cup of water
- pinch of superfine sugar
- 1 tablespoon balsamic vinegar
- 1 tablespoon chopped fresh marjoram
- pepper
- Saute garlic and chili for 1 minute. Add lemon zest, tomatoes, paste, and sugar. Simmer 12 minutes.
- Add vinegar and marjoram. Simmer 5 minutes. Pepper to taste.
- Cover until needed.
