Tomato Sauce Arrabbiata - Feeling Saucey

INGREDIENTS:
  • 2 tablespoon oil
  • 2 cloves garlic
  • 1 fresh Serrano
  • 1 tablespoon grated lemon rind
  • 1 pound ripe tomatoes
  • 1 tablespoon tomato paste in 2/3 cup of water
  • pinch of superfine sugar
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon chopped fresh marjoram
  • pepper
METHOD:
  1. Saute garlic and chili for 1 minute. Add lemon zest, tomatoes, paste, and sugar. Simmer 12 minutes.
  2. Add vinegar and marjoram. Simmer 5 minutes. Pepper to taste.
  3. Cover until needed.
