Minestrone Soup

This simple lunchtime soup is prepared using fresh frozen and pantry items and on-hand ingredients.

Makes: 1 large pot























Aromatics
1           Onion
1           Celery  minced
2           Carrots chopped
2 T        Olive Oil

Liquids
14 oz      Diced tomatoes
2 C         Water
1 C         Pasta sauce
1/2 C      Onion soup

Add
14 oz      Beans
   1          Zucchini, chopped
1/2 C      Cabbage, spinach
1/2 C      Cooked pasta
   1          Garlic clove pressed
   1          Basil cube

Finish
1 T        Olive oil    
1 t         Pesto
