A lively vegetarian yellow split pea soup.
Makes: 1 large pot
Aromatics
2 T Sunflower Oil
1 Onion minced
3 c Garlic minced
1/2 Ginger minced
6 Scallions thinly sliced
1 Dried red chili
1/4 t Turmeric
2 t Salt
Add
1 lb Yellows Peas rinsed
8 C Water
Finish
2 T Sunflower oil
3/4 t Cumin Seeds
1 t Mustard Seeds
2 T Fresh Lime Juice
2 T Chopped Cilantro
1. Saute aromatic ingredients together.
2. Add peas and water and cook until the peas fall apart.
3. Fry spices and stir into the soup to finish — a technique borrowed from many classic Indian dishes.
