Tomato Sauce - Pasta and Co. p180












INGREDIENTS:
  • 3 tablespoons olive oil
  • 3/4 teaspoon dried basil
  • 3/4 teaspoon dried oregano
  • 1/4 teaspoon dried pepper flakes
  • 2 cloves garlic
  • 2 cups dry white wine
  • 1 28-oz can tomatoes
  • Salt
  • optional 1/2 teaspoon sugar
METHOD:
  1. Saute basil, oregano, pepper flakes and garlic
  2. Add wine. Simmer 10 minutes.
  3. Add tomatoes. Simmer partially covered 20 minutes.
  4. Add sure if wine is very dry.
  5. Cover until needed.
