- 4 inch cinnamon stick
- 2 teaspoons cardamon seeds
- 1 teaspoon whole cloves
- 1 tablespoon black peppercorns
- 2 tablespoon cumin seeds
- 2 tablespoons corriander seeds
- optional: cayenne
- Pulverize and chop cinnamon 1/4 pieces.
- Toast all dry over med about 3 minutes. Cool quickly
- Grind fine.
- Freeze.
FOR CURRY POWDER :
ADD
- 1 tablespoon fenugreek
- 1 teaspoon tumeric
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- optional: mustard seed, saffron threads, fennel
